How can you go wrong with seafood? Seafood is a summertime favorite, which is why we were intrigued to scope out an easy, delicious recipe that incorporates calamari. The salty seafood taste mingles perfectly with a zesty spice mix.

This “calamari recipe Italian” — a rustic dish that we absolutely love — called Calamari Rustico. It’s from Sarcastic Cooking and goes great with a nice bottle of wine.

What You Need

  • 1 lb. of calamari, cleaned and cut into ½ inch pieces
  • ½ cup of Water
  • ½ pint of pitted kalamata olives
  • ½ red onion, thinly sliced
  • 1 tablespoon of fresh parsley, chopped
  • ¼ teaspoon of salt
  • 1/8 teaspoon of pepper
  • 1 tablespoon of olive oil
  • juice of a lemon
  • 1 tablespoon of red wine vinegar

How to Make It

  1. Put calamari and water into a skillet and bring to a simmer, placing a lid over the skillet
  2. Steam the calamari for about 3 minutes, then remove and drain
  3. Mix the calamari with red onion, parsley, salt, pepper, lemon juice, olive oil, red wine vinegar, and kalamata olives in a large bowl and serve
